If I use my workplace's wifi, can they trace my internet activities (history...?)..?
if I downloaded an app and used that app to surf the website, would my workplace IT dept be able to see what I'm doing?

Yes, they can, if they want to and/or have reason to. It makes no difference what computer it is... if it connected through their service it can be traced by them.

If you're using a device on their network, it would be possible for them to trace your history providing they have the right network and infrastructure in place (which most workplaces would).
