Crash course SEO? Useful SEO resources?

I have a very general knowledge of SEO/SEM, which basically stops at the definition and uses of the two. I am starting an internship in January and it would be very useful for me to know how to skillfully execute SEO and SEM. Anyone with experience have recommendations for online resources or books that break these down for someone with little experience to help me build on this skill?
