Search engine optimization is creating a website in such a way that Google (and other search engines) will put your website on the first page of results when certain terms are typed.

For example, if you own an online battery store, your whole business might depend on whether your site comes up when people type "buy batteries" into Google. So there are strategies you have to follow - putting the phrase in the metadata, peppering the website with the phrase, and getting other sites to link to you - to make sure that happens.

When you do a search for a product, service or website, there's often a possibility of millions of results, yet people rarely look further than the first two or three pages.
For a search engine to be useful, it needs to display the best results for the particular user, so an understanding of how they work is vital for the webmaster.
If you create a website, you want it to be seen, so the more you tailor it to suit the search engines the better the chance you have of getting listed within those two or three pages.
The process is called search engine optimisation, and is one aspect of internet marketing.
