A digital audio file is a "recording" of actual sounds, music, narration, whatever. The real-world sound waves are sampled and digitized.
A MIDI file is not a recording of actual sound, but is a set of instructions about pitch, volume, tone and other qualities of the sound.
Use digital audio if you're listening to music. Use MIDI if you're using a keyboard to compose for orchestra.
