Can I compile a list of stories from Reddit? If so, how?
Can I compile a list of stories that users have posted on Reddit? Does it go against any rules of some sort?

And if I am allowed to, how would I go about compiling a list and being able to share that list on places like Facebook and Pinterest?

Users on Reddit still have copyright on their stories. Compiling the list won't be a problem. (Re)posting it might be, depending on jurisdictions and so on. On the other hand, that's just a formality. Consider 9gag and its ... interesting relationship to Reddit, for instance.
