can people know who I am through my fake Facebook/Insta/twitter account?
i have a facebook and insta account, but thing is I don't put real name and pictures.
Can people detect my ISP, my location, my laptop brand and whatever details that will let people information of who I am?

is it possible to be incognito from all my accounts?

Nope. I'm the same but more likely A roleplayer.
If there are some idiots you have in your list on Fb they might report you. And for instagram and twitter. They can't
