What is the SEO recognized term for these sub-headers? If you know how to change them in the results, that would be appreciated as well. (circled in red)

These are sitelinks. They are chosen by Google and you only have limited control over them. In Google Webmaster Tools you can request the removal but not request what should be there instead.

So the best idea is to request the removal of the ones you don't want, wait for Google to choose new ones, remove those you don't want, and so on until you get the ones you do!

Hi,
These are main parts of that site, that Google had recognized them as most important one, or most relevant one. From SEO perspective that is good, because that means new indexed parts of the site and more links in SERP (Search Engine Result Pages).
I think that this is automatic process and you can`t change them, maybe you can remove them if via Webmaster Tools or on some other way block crawler`s access to them or add them no-index option.
