Being "able to understand their customers better." is not a huge part of seo.
While measuring the amount a given keyword attracts to a given page employs analytics, I believe it is more important as a part of the sales funnel optimization process, often involving split testing.

Yes Analytics is important, and it's not rocket science. You don't need "Training".

Just get yourself a free Google Analytics account, and set it up on just 1 website you work on. Then you can view it's stats and learn how it works in an hour or two at most.

Look up Seomoz.org for advice on SEO.
