If you do a 301 redirect to a new domain, do you need to keep the old domain hosting up?

If you do a 301 redirect to a new domain, do you need to keep the old domain hosting up?
Do search engines know that once they see the 301 redirect to look at the new page from now on? If so what happens if you let the domain go?

301 works only if both sites are up. But, some search engines do use it to re-index their database.
