Getting iPhone 5 on a plan soon and the plan includes 500MB of data.
I'm pretty much always connected to some sort of wifi (home & work mostly) but a few times a day I update my emails & instagram, send a couple of emails a week and upload a few photos to social networking sites. (Don't have Facebook). Will 500mb be enough?

Most likely. My wife and I have a shared 1GB plan, she with her iPhone 5 and I with my Galaxy Nexus, also with WiFi connections at home and at work, so with the occasional use for checking email, checking in on Yelp, and the occasional photo upload, as well as occasional use of Google Maps Navigation, we usually stay well under our limit.

Try it and keep an eye on your data usage as your first month progresses and, if necessary, I'm sure you can upgrade to a 1GB plan for not much more per month.

Hope that helps!

For sure it is. I have 2GB of data and hardly use it all. The only way to use 2GB is by watching videos. You can still watch videos with 500MB but not many unless you opt for low quality. Checking emails and surfing the web doesn't take that much data.
