Any book on SEO will be out of date as soon as it is printed, SEO is just moving that fast. It’s also worth reframing the whole idea of “Search Engine Optimization” and think instead of “Google Pleasing”. At the end of the day this is the only thing that will help you and your clients.

I would also recommend just focusing on 2 or 3 off-page techniques that are working well at the moment.

2 or 3 because that should be enough to give your clients a bump in the SERPs and off-page because you won’t have to edit any of their site code.

The only other thing I would say is be choosy about your clients. I actively search for clients ranking on page 2 and approach them. The reason for this is moving from page 2 in Google to page 1 is HUGE, and quite doable.
