Can you stop your subscription to premium crunchyroll account and stop paying?
I'm wanting to start a crunchyroll premium account and heard that some people can't unsubscribe? I don't want to risk it, I'd like to stop paying eventually.

Of course you can. Contact their customer service and ask them to change your account to Free from Premium.
