Can my parents find out what I was doing on my iPhone and when I was doing it?

I have an iPhone 4 with At&t. I'm not supposed to use my phone after 7:00 p.m. until I get it back the next morning. I'm not the best at keeping this rule, but I do mostly keep it... it's just that I've forgotten lately to take it downstairs at night, and my mom has threatened that she can check what I've been doing even if I've cleared history. She said she found out how to on the internet. I'm sorta skeptical, and I want to make sure just in case that she can't find out because I have slipped up several times (I'm not perfect, don't judge ). I just need to make sure she can't find out what app I was using and when I was using it, because I don't normally "browse the internet" on my phone. That's what the laptop is for (and I know every possible way to secretly browse on the laptop). So when I'm on my phone, it's just using apps like Instagram or Spotify, and if I am on the internet, it's normally private browsing. Is it possible for her to find out WHEN I was accessing the internet, say if I was just looking at but wasn't liking anything on instagram? I don't really care if she sees what I was looking at on the internet because it's just stuff like youtube or google drive or when does so-and-so have a concert at said location and the like.
