Am hoping to start keeping books soon and as everybody knows the tax man likes to see every minuscule detail of everything so I need to be able to know all the tiny details and how much my fees on eBay for listings are costing so I can note it down in my bookeeping....

Any simple ones out there that are easy to understand and free

GNU Cash is pretty good and free. There really aren't a lot of "easy to understand" accounting systems. If you are worried about the tax man, I'd suggest GNU Cash and really digging in to understand it. I'm assuming, of course, that you know at least a little about simple accounting.
