How do I change the privacy setting on my Facebook profile?

I just found out that friends of my friends on Facebook can view my recent activity and when I add a certain country to my hometown, view my profile picture and all my other previous profile pictures. I'd really prefer if they had no access to my wall whatsoever until I accept them as a friend on Facebook.

How do change the privacy setting so that friends of friends and other people cannot see anything on my wall and my pictures until they have been accepted as my friend?

For your hometown etc, the privacy is there itself.
