How the heck did someone who’s not even on my friends list ‘poke’ me?!

I have everything set to private, please explain?

The person who poked me, I think is a friend of a friend…(Don’t know if that’s a contributing factor…)

That's because they don't need to be your friend in order to poke you. Users can poke a confirmed friend, someone in a shared network, or a friend of a friend.
