Is there any way I can switch from Facebook timeline to the old Facebook profile format?

Its not possible to completely remove Timeline, but you can alter your own view of Timeline in your browser to display it in a single column layout, to make timeline pages easier to read, you just need to install the FB Purity browser extension and select the single column layout option:
