Or are they the friends you view with the most? Or if none of these are true then how does Facebook determine how these friends on your sidebar are visible?

no those are friends that you added and the people you see changes randomly theres no secret behind it

No, Of course not. You added those friends. Your friends can see your wall, but most of them don't bother to waste time. Only your friends can see it, but they don't have to if they do not want to. You could always block a friend or go to your privacy settings so that they cannot see your wall.
