If I add a friend on Facebook when my mum is friends with that person I'm going to add on Facebook?.?
Because I changed all of my Facebook Privacy Settings to only me will it alert my family on Facebook that I've became friends with that person on Facebook?.

If its "only me" then its only you! And change the privacy settings of your friends list also to "only me"! This will block everyone to peep into your friends list! no matter if they are your family or close frnds!
