Like if it says you're Bob's sister, and Bob removes that link, will it notify you?

No. Facebook does not notify you of anything like that. Only when someone removes a tag of their self on a photo.It doesn't even notify you if some one removes you from their friend's list.

Nope facebook wont notify you
they will only notify you if someone accepted your family request but not removing |
