I often sign into my Facebook page and a couple chat bars with no prior chat history will be open. what is with that?

that only happens when someone tried to talk to you but you were offline or you chatted with them the last time you were on and didnt close your chat boxes

Because they're the last people you chatted with. If you don't close the chat boxes, then they'll come up again when you log back in.
