When using facebook mobile if I want to get a notification for a certain person status does it tell them that?
Say I want to get a notification everytime my girlfriend changes her status. Will it tell her that I chose to get a notification when she changes it?

No, facebook doesn't let others in on how you configure your settings, only meaningful content such as status changes, photos, things like that.

nah it doesn't. facebooks policy is that it doesn't show who looks at whose profiles. that includes statuses.
but really your gonna stalk your girlfriend?
