What would make you hide someone's news feed on facebook?

If so, would you un-hide her later on?

I would, if he/she was super annoying and basically every post on your new feed is from him/her. I wouldn't try doing it unless that person is extremely getting on your nerves and you don't want to block them.

It would depend on how annoying the updates were... Some people post the most annoying stuff...

I wouldn't hide someone just because they had a lot of updates. I've only hidden one friend from my news-feed and only because the content of his status updates annoyed me more than informed me. (He's an uber conservative and practically every status update was a hate-filled rant.) It's never about the quantity, it's always about the quality.
