You can download your facebook page to your hard drive (just select "save page as" from the pull down menu at the top of your browser) but that won't update. So you'd have to re-save every once in awhile to see new content.

Facebook wasn't really made to be viewed offline. It has features that require you to be online to use (like the chat or the notices about updates among your contacts). The advantage of saving your Facebook page is that you'll have a "copy" of that page at that exact moment in time. The disadvantage is that as soon as you have a new wall post or something else happens on your Facebook page, your saved copy will be outdated.

If you're goal is to hide from people who are trying to chat with you, I believe you can turn that feature off in the Facebook preferences.
