How do you use hashtags?

On Twitter and Facebook, people use hashtags in their statuses. Do you just type the # sign and type a witty phrase, or is there some kind of thing you choose from or some other way to have a hash tag in your status?

You just type the # sign and whatever after it. However, on twitter, these are effective because whatever you put in the hashtag automatically turns into a link that you can click in order to see other tweets that have used this same tag. For example, if I were to tweet "I like #milk." I could click on milk and see other tweets that used #milk in them. Twitter also keeps a count of how many people are using these tags which results in Trending Topics.
Facebook users who do this are annoying because it does nothing on facebook besides make you seem confused as to which website you are on.
