How does Facebook choose the friends that appear in the sidebar on your profile?
And the friends bar on other peoples profiles? I have the new version of facebook.

It's randomized. I prefer the old Facebook because you could show the ones you want to be shown.
If you wanna be sure it's randomized, go onto your profile, see the friends that appear there and refresh the page - it'll be different friends.
