Video rental store = No, Netflix and online streaming will kill it

Local Gym = unless you are in a small area where 24 hour fitness and Balley doesn't exist, or you have a very specialized gym.

Newsagent - Twitters!

Bakery/cafe - I think this is a good idea. If I were you, I would offer cheap (like the McDonald $1 menu) but healthy food. cheap and health food is a good market to concentrate on in this economy.

A mobile snack bar - customer traffic depends on weather..it's pretty unstable income...

Launders - You mean Laundromat? It good business, but it need a pretty high maintenance cost.
