Why would she do this and what does it mean?
So I dated my first girlfriend for 7 months until she got it in her head I didn't trust her and broke up with me then went out with another guy a day later and by the end of the week were boyfriend/girlfriend. Well she had 3 exs before me all lasting less than a month and this guy didn't make it a month either. We started talking again a couple days ago and the first time we talked she was very rigid in staying broken up and didn't wanna talk to me. The next time she was still rigid, but we talked a lot longer and I told her how much I loved her and I'm pretty sure I convinced her that I did trust her and it was a misunderstanding, and also found out she still had feelings for me but wanted to move on (even though we really did have an amazing relationship and I always treated her well) but she said it was too late and I ended it with saying if she ever felt like talking than I would too. I also went to her house to get my sweatshirt and things went well with her dad (her whole family always loved me) and he kept telling me how she's really a good person and sounded kinda hopeful that we might get back together. But when we stopped talking to her I seriously didn't expect to hear from her again because of how tight up she sounded. But yesterday out of nowhere she texted and we made small talk for a couple hours and texted alot, but she still seemed a little uptight at times and then said she had to go and I saw on twitter a little while later she was complaining that someone never responds to her texts when she needs to ask something important. Did I get through to her and she's thinking about getting back together and is just testing the waters? Or is she really just talking to me as a friend because she was bored and this doesn't mean anything?

I'm going through the exact same thing right now with my ex... unfortunately, I doubt that either of our girls are coming back to us. Still hoping though! Good luck

sorry buddy but it seems to me shes playing mind games with you. what i mean by that she only texts u or wants to be back with you only in her terms when shes ready. i say lose all contacts with her. trust me its for the best.

The last sentence of your question contains the answer. She is simply using you until the next guy comes along. Despite what her family say, you do not know what she tells them.
having had plenty of BFs prior to you, and finding ANOTHER the day after she split with you, suggests she does not know who she wants, but swaps "friends" quickly.

Stand back and watch !

She was bored. Doesn't mean anything. On the slight off-chance that she may still have feelings for you, she still won't take you back. Go ahead, try.

Another important point, when she left you cause she said she didn't trust you... That seems to inconsistent. I mean, why bring it up in the first place? What was this thing you did that made her think you were untrustworthy? ... See where I'm getting at? She was just looking for an excuse to break up with you so she can move on to the next guy.

These kind of women are classified as "attention wh­or­es". She loves the attention you give her when you text. There's just no winning with them in the long run. Sure, you could get laid, but to what effect? She'll just crush on another guy, then move on within a month. But I highly doubt you're gonna get any from this girl again..
