Try other forms of social media instead of just across Xbox live? I don't know, there seem to plenty of options e.g. Skype, MSN, email, AIM, Facebook, Twitter etc. Get each others phone numbers (if you live in the same country) and text/phone each other.

It might seem old fashioned, but write each other letters. Include pictures, small presents like a small mario statue or something every so often. Just like any other long distance relationship.
