When in airplane mode it essentially shuts off all signals this includes wifi. So no.

You probably wont, and I wouldn't even try anyway. It's just a few hours. Besides, they tell you to turn off your electronics for a reason. Their signals can interfere with the plane's signals, so it's a safety issue. Bring an mp3 player to keep yourself entertained instead.

I have vacationed in Mexico a number of times and the last couple of times I have taken my iPhone with me. You can turn the iPhone on airplane mode and then go into settings and manually turn wifi on. It will stay in airplane mode even with wifi on. However, if you accidentally turn airplane mode off, all your text messages and voicemails will come through and you will end up paying a lot in fees. So, what I recommend is to take your sim card out (all you need is a paper clip to pop out the sim card tray on the side as long as you are using an AT&T iPhone). That way, you can use all the features you want without worrying about any data charges. iMessages will work as well. I always carry the sim card with me in my backpack so that in case of emergency I can just pop the sim card in and make a call even though it will cost me a lot. Hope this helps. Have fun in Mexico!

Yes. Initially Airplane Mode will take off wifi as well but you can easily put it back on while leaving AM on.
