Short answer is yes much of the time.

Some games just live nicely on your phone once downloaded and use no data, others will check for updates or keep tabs on high scores. So find out more about the games before you download them.

It depends. if the game requires you to have either mobile or wifi connectivity in order to play it; then yes, it will show up on your contract; unless you play it via wifi. Doesn't matter if you surf the web, use social applications, download things from the market or elsewhere or play a game that requires connectivity, all these factors will use mobile data or wifi. If you use it over mobile data (3G) it will show up on your contract.

That depends. Some games require continuous internet connection to be played. Some are playable even when you are offline and not connected to the internet. That just depends. For example, Angry Birds do not use internet connection, but if you were to, say tap on their Facebook link, then you would need internet connection.

Only for multiplayer games, in-game advertising, updates and clicking through to the developer's website etc. If you have downloaded a game and are connected via WiFi it will not need to use your data, even if it is doing any of those things above. Sometimes apps can do things in the background (like update) even if you aren't using them. To be sure, just switch off 3G when you are not using it (ie unless you are actively using the internet while away from a WiFi connection).
