Why does my Mac open the last document opened?

Whenever I open up Word/Excel/Powerpoint/TextEdit, the last document/spreadsheet/slide show I opened in the corresponding application opens instead of a new one. I don't know why this is happening, and I've tried looking through the preferences of each of the programs as well as the system preferences. Anyone have any ideas of what's going on?
