Bipolar (ex) girlfriend stopped taking her meds and went manic?
Everything with my girlfriend was great, until suddenly one day she was mad at me but didn't have a reason why and insisted it was my fault. I tried to find the problem but the next day she just broke up with me and said she needed time. I told her I wasn't going to wait and that we were either together or we weren't. She said she needed time again and so I told her it was over and to never come back.

A friend of mine was talking to her and said she had stopped taking her medication + was acting VERY unstable; going from happy to sad to yelling in the blink of an eye. We are in the same room together often and though I ignore her, her body language is always directed at me and she glances over all the time.

She never used to post to Twitter but now she has started blatantly flirting with guys on it. It seems like she's just mimicking me though.

Will she return to her normal self any time soon? Will she come back to me? I'm in love with personality #1 but personality #2 is crazy

what do you mean normal self, its either her bipolar personalities or her medication personality? She needs support even if you dont get back into a relationship with her just try to support her. Also if she's suicidal dont be afraid to call the police or get her to the hospital asap because being of her meds when she is manic or depressive is really dangerous. Just try to encourage her to get back on her meds.
