Say I deactivate my Facebook on my iPod, will it also log it off on my iPad which I'm also logged onto?

that might be deleting your entire account, whatever FB is on, it will still be on their, you will just be logged off , deleted, you need to physically remove FB from mobile devices if they are apps

yes, it will log out.
If you want to log out of the other devices end the active sessions.
From your Account Settings-> Security->Active session , here you would see all the logged devices, click end activity next to it will logged out the other devices.

Yes, it will log you out, but it will not remove the app from the device. To reactive your account (from any device) just go to the Facebook home page and log back in as you normally would.
