I'm a very shy person who takes a whiiiile to warm up, but I don't want to sound like I don't like what he's sending or anything. What should I respond when he sends them? It'd be easier in person but to type it out just feels weird.

be honest. You aren't ready and that's how you are, there's nothing anyone can do about it. Rather lying about it would give him ideas to do more of this stuff future tense and you would be even more uncomfortable and generate a problem. All that can be avoided if you can speak your mind.
