An infographic is a graphic that gives info on a particular subject.

If you design an infographic and submit it to sites that host them, you will probably get a backlink from each of those sites. If people like it, they might feature it on their site and will likely also backlink to your site.

Infographics are a great way to gain links, traffic and increase brand awareness.

Infographics (or Information Graphics) are depictions of information in a graphical format.
It is used to let the people understand the message being delivered quickly and easily.

In short, Infographic = Data (Text + Statistics) + Image (Graphics)

Now coming to your question, infographic submission is a process of creating a good, informative, easy to grasp, topic related infographic, using any graphic design software like PDF2DTP, Q2ID, PUB2ID, ID2Q, FlightCheck, Pagezephyr etc, and submitting it in any infographic submitting site.

Since crawlers can't read the infographic, you have to include extra information with it, such as - title of infographic, description.

Infographic submission refers to getting backlinks and generating traffic by using graphics, images etc representing information or knowledge on any subject.

For SEO, they are used because:
1) The potential of their use in the social media sharing world of today. You might have noticed how many shares are of pictures, images and stuff. This could make a nice way of promoting or marketing oneself.
2) Because of this, they have a great potential to be used by different sites, people, business, designers, bloggers etc all over the world.

Things you have to do to use them for generating traffic include naming the infographic properly with your keyword or site or whatever suits best (hyphen separated), hosting them on your server so that you get the link credit, promote the infographic using social media bookmarking and networking sites, submit it to visualization directories, to generate attention from designers and get additional links, etc.
