what would it be like to the person you block on facebook?
Well there are some people that don't need to be on mine. If I block them would it be just like deleting my Facebook account? and with people I have listed as family will it work the same way?

when you block a person on FB, they no longer can find your profile and in turn you also cannot view their profile either! It's like the 'search' found no results.
Yes and Yes are the answers to your questions.

However if you just 'unfriend' them, then they are no longer on your Profile, and can now only view that stuff on your timeline that is public.
