Try a reset;
Reset iPod touch: Hold down the On/Off button and the Home button at the same time for at
least ten seconds, until the Apple logo appears.
Then connect to computer and if iTunes sees the iPod restore it.
If screen is still white, let the battery fully drain. After charging for an hour try the reset, connect and restore again. If the iPod is off you can see if placing the iPod in recovery mode will allow a restore.

Hold down the home button and the lock button for about 20seconds and the ipod should restart
This acts as a forced restart like holding down the power button on a pc
