And is there a way to delete history so no one can see the websites or apps I have been on? For example if I go on Facebook and someone looks at my iPod Touch will they know I went on it?
How can I delete the history?

It's possible to see which websites from your safari history. But I don't think you can tell which apps you've been on. & you can always clear your history.

When you first click the Safari browser on the iTouch, a screen appears that displays "History". In this folder is list of all websites visited and visited websites can be deleted from the History folder.
