If you have a person on your profile with you have listed as in a relationship with and decide to delete or unfriend them, will they no longer appear in your profile?

If you block them, yes.

It will still say your in a relationship but without the persons name

If you delete them or unfriend them they won't appear in YOUR profile but, they can always look you back up and you can do the same. If you don't ever want them to be able to find you or view your profile then you must block them.
