Blocking will make the other person profile seem like it never excisted and won't be able to search you

Blocking the person, especially if he/she is not friend-ed makes it seems that you just do not currently use facebook. But the person will have no idea that he/she has been blocked. But if he/she is friend-ed that is another thing.

Yes you can block her. Go to her Facebook profile click on the gear button on the timeline and select block. She don't know about it. You can block anyone in Facebook.

Yes you can, when you block someone, they just get blocked and they won't get notified. So if you block your mom, she won't get notified unless she tries to access your profile. Then it will say that your page is unavailable on her account. That's the only way she might find out.
