If I will be operating this small market as a sole proprietor, which is better? Can I use TAX-ID as a sole proprietor instead of a corporation or LLC? I am in Los angeles if that matters.

if you will be the ionly employee, you can use your ssn. If you intend to hire employees, you can still be a sole prop, but you'll need to get a federal ID# - go to http://www.irs.gov and search the forms and publications link - you can download what you need there
