If you're not in the Facebook group, does it still say you've seen it ?
Say one of your friends is in an "open group" and comments on something in the group and it shows ups in your news feed. If I click on it to see what she said, will it say I've seen it ?

No. Stats will only show about the group members who saw the post and not guests who are not a part of the group.
