How do you upload a whole snap shot of a text message/email on
Instagram?

Same way you do pictures.
Just take a snapshot of your screen & it'll be saved to your photo gallery.
On the Iphone all you have to do it press the lock button & the home button at the same time & it'll take a snapshot
