If someone isn't showing on your fb chat on apple app, does that mean they hide themselves?
I know not all friends get on chat, but could that happen?
Even if they weren't online?
They showed up before when they were online and not online.

They probably turned chat off. If not, then it's probably something wrong with the app itself.

they either turned off the chat feature, or made it so only certain people can see them on the chat list
