Whenever you see an apostrophe, you know the word is a contraction: IE, letters have been taken out.

In this case "You're" is short for "You are" (so the "a" is taken out.)

You are opinion makes no sense, as I'm sure you'll agree.

Therefore, the correct phrase would be "Your opinion."
