I want to post something on my wall for only 1 person to see.I want to know when I turn the privacy off for new messages will that message stay private or become visible for everyone to see cause I don't want it to.

what you want to do is not possible - you are confused about how the privacy settings work
if you want only one person to see it, then just send them a message instead of posting it as a status

Send a message or share with a friend list of your choice.
Facebook claims its new privacy settings will make it much easier for users to control information, and fewer options needed to make all your information private.. It's also made many of the settings visible at a glance.

I would rather suggest you to send a private message to the person for whom you want to post on your wall.
