How do I change my Facebook privacy settings to show some people my wall but not my status updates?

When you go to create a new status message, there is a small lock button to the left of the share button

Click on that and then click on Customize.
Change the settings to what you want.

If you want to hide the message from some people, then add their names in the 'Hide this from' section.
If you want this to be permanent, choose the 'Make this my default setting' option.
