Google hasn't released Chrome for those operating systems. However, you can run it in WINE. Linux users should already be familiar with WINE. Here's some information about WINE on Mac:

Google hasn't yet released its browser Chrome for the Mac and Linux users. But the CodeWeavers team have already created a Linux and Mac port of Google Chrome. The Google Browser port, known as Crossover Chromium, is available for download on Mac OS X as a native Mac .dmg file or on Ubuntu, RedHat, Suse, etc. as standard Linux packages, here >> http://techkiddie.blogspot.com/2009/04/d...c-and.html
