Is it rude to remove someone from your Facebook friends?
This guy added me to Facebook, but I don't think I know him. I actually think he added me by mistake. Would it be polite for me to remove him from my friends? I try to keep my friends list for people I actually know. I'm not one of those people who adds everyone they can find just to look popular.

I deny requests if it's from someone I don't know. There's nothing rude at all about it, especially because they won't even know you did it.

It's not rude, especially since allowing him to remain your friend gives him access to more personal information about you (and your other friends) than he's probably entitled.

On facebook you can see when you add friends... on the news feed, but it is not public when you delete them... so it is totally ok. If you don't know them, and don't want to know them... then delete them... it is perfectly fine.
